  New cheese: L'Origine de Charlevoix
By evoking the fall of a meteorite some 350 million years ago and the resulting mountainous terrain, this cheese's name refers us to the region's unique products and the presence of the Canadienne breed of cow in our mountains.  »
 
     
  Le 1608
A few hundred head of cattle imported from France between 1608 and 1670 gave birth to the Canadienne breed. Of the 500 000 head population in 1900, less than 500 remain today. They were reintroduced in Charlevoix in 2007. Three herds (Hengil, Lyne Breton and Michel Pilote farms) are in production on the Charlevoix plateaux.  »
 
     
  L'Hercule de Charlevoix
L'Hercule du Nord reminds us of Jean-Baptiste Grenonfrom Baie-Saint-Paul, whose strength was phenomenal. Captured by General Wolfe's troops during the summer of 1759, Grenon was quickly released by the British soldiers who were unable to overcome this Charlevoix strongman.     »
 
     
  Le Fleurmier
This soft cheese with a bloomy rind is somewhere between the brie and the camembert. It should be eaten at room temperature, when it becomes creamier and can be served in many ways.»
